Roast Chicken Sauce
Recipe by: (serves 6)

Ingredients:
8 chicken drumsticks
2 shallots, chopped
2 cups white wine
1 small branch fresh thyme
3 cups DK Chicken stock
2 cups DK Vegetable Stock or water


Method:
Preheat the oven to 425 degrees. Lightly grease a small roasting pan, and place the drumsticks on it, leaving a couple of inches between each one. Roast the drumsticks until golden brown, about 30-45 minutes.

Meanwhile, reduce the wine with the shallots and the thyme until almost dry. Remove from the heat, and add the drumsticks and the Chicken Stock, cooking for one to two hours, skimming off any fat as necessary. You should have about on and a half cups of sauce left.

Strain the sauce through a fine strainer, season with salt and pepper, and finish with 2 tablespoons of butter if desired.
