Charles’ Onion Soup

Ingredients:
4 sweet onions, sliced crosswise
2 Tbsp butter
Pinch of sugar
1/3 cup Marsala wine
4 cups DK Beef Stock in a Box
1/2 tsp salt, or to taste

12 slices baguette bread, toasted
1 cup Gruyere cheese


Method:
Saute the onions in the melted butter and sugar until brown. Add the Marsala wine and reduce by half. Add the Beef Stock and the salt. Bring to a boil and lower to a simmer.

Turn on broiler. Divide soup into four oven-safe bowls. Place three croutons on top of each soup, and cover with the Gruyere cheese. Place under broiler until cheese is melted and slightly brown. Serve immediately.
